Blender Pancakes

1 egg
1 egg white
1 1/2 cups plain low-fat yogurt
3 Tbsp vegetable oil
1 cup all-purpose flour
1/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup old-fashioned rolled oats
Combine the egg, egg white, yogurt and oil in blender; whirl until
smooth. Add the flour, sugar, baking powder, baking soda and salt;
whirl to blend. Add the oats; whirl briefly just to mix.
Heat a griddle or large skillet over medium heat. Lightly brush
with vegetable oil. Spoon about 3 tablespoons batter for each
pancake onto griddle. Cook until bubbles form on top, 2 to 3

1 tablespoon wheat germ
1/4 teaspoon salt
1 tablespoon sugar
1 tablespoon baking powder
1 egg
1/2 cup milk
1 teaspoon vanilla extract
2 rounded tablespoons fat free yogurt
1 1/2 tablespoons melted butter
One apple, pear, or peach cut into cubes (optional)
raspberries, blueberries, strawberries, cherries (optional)
raisins (optional)
sliced banana (optional)
pecans, Walnuts, almonds (optional)
cinnamon and nutmeg (optional)
1 tablespoon cocoa powder (optional)
chocolate, peanut butter, or butterscotch chips (optional)
any other flavoring or extract (optional)
American Pancakes

1 cup buttermilk
1 cup flour
1 tablespoon baking powder
3 tablespoons melted butter
pinch salt
vanilla (optional)
sugar (optional)
Beat together egg and buttermilk. Add flour, baking powder, butter
and salt. Cook on hot griddle.
Easy, Light and Fluffy Pancakes

1 cup loosely packed flour
1 Tablespoon baking powder
1 egg
1/2 cup milk
1/2 cup water boiling water
1 Tablespoon oil (canola seems to be the healthiest)
Sift together flour and baking powder.
Whisk egg, oil, and milk together, then whisk in boiling water.
Stirring liquid, slowly whisk in flour and baking powder mix. Don't
over whisk, as this'll toughen the pancakes. A few lumps are okay.
Let stand for 10 minutes at room temperature.
Pour on a hot griddle. Turn when most of the back has gone from
glossy to flat (the bottom will be turned dark).
Hootenanny Pancakes

1 cup milk
1/2 teaspoon salt
1 cup flour
Combine in blender and blend until fluffy the eggs, milk and salt. Tap flour into blender a little at a time). Beat with above ingredients.
Melt 1 cube [8 tablespoons or 1/2 cup] butter or margarine in 9 inch by 13 inch glass dish in 450 degrees oven. When butter is bubbly, pour in batter ... immediately return dish to oven. Bake 20-25 minutes on lower rack.
Lavish with heated maple syrup, fruit syrup, or jam.
Good with sausage or bacon and fresh fruit cup.
Plain Pancakes

2 eggs
5 Tbsp butter
1 cup milk
1 1/4 c all purpose flour
1 Tbsp. sugar
4 tsp. baking powder
3/4 tsp salt
Beat the eggs in a mixing bowl until they are thoroughly blended.
Put the butter and the milk in a small saucepan and warm over low
heat until the butter has melted. Set aside and allow to cool a
little --- don't add this mixture to the eggs while it's hot or
the eggs will cook prematurely. Stir the butter mixture into the
eggs and mix well. Put the flour, sugar,baking powder, and salt
into a bowl and stir with a fork until well mixed.
Banana Lemon Sauce for Pancakes

1/4 c butter
1/2 lemon
1 orange
2 ts cinnamon
3 bananas, diced
1 tb honey, or to taste
Grate orange to to produce grated rind. Squeeze juice from orange
and 1/2 lemon. In small saucepan, melt butter. Add bananas.
Simmer till bananas are soft. Add remaining ingredients and serve
hot.
Aebleskiver

250 grams flour
3 eggs
1/2 liter light cream or milk
25 grams yeast
1 teaspoon sugar
Sift flour with sugar and salt. Mix yeast with lukewarm cream (or
milk). Add eggs (one at a time). Combine all of the previous.
Leave for approximately 2 hours to raise. Bake in Aebleskiver pan
to golden brown at low heat.
NOTES : 10 grams of baking powder could be added, then the cream
should not be heated and the Aebleskiver should be baked at once.
A little apple sauce or pieces of apple could be added while baking.
Serve with either sifted confectioners sugar, blackberry jam or
